Mango pickle is an ideal accompaniment to Punjabi meal. Whole spices and mangoes are preserved in mustard oil. It requires just half an hour to make tasty Mango pickle or Aam Ka Achaar Recipe.



Aam Ka Achaar Recipe | Mango Pickle Recipe

  • Chopped mangoes – 2 ½ kilogram
  • Salt – 300 grams
  • Fenugreek seeds – 100 grams
  • Black peppercorns – 2 tablespoons
  • Onion seeds – 60 grams
  • Mustard Oil – 1 ½ liter
  • Fennel seeds – 100 grams
  • Turmeric powder – 50 grams
  • Ground red pepper – 50 grams


Preparation Method:

Take half cup oil and all the spices and mix them well. Sprinkle a small number of ingredients into the airtight jar.

Cut mangoes and rub the spice mixture over them. Add mangoes in the jar and put in the spice mixture.

Keep on making the layers of mangoes and spices till the chopped mangoes and spice mixture are used up.

Add the remaining oil in the jar to cover the contents. Keep the jar in the sun for 8 to 10 days. The mangoes will get soft within a month.

You can use mango pickle or Aam ka Achaar with daal, paratha, and rice.
