Burlee refers to those foods that are sprinkled with caster sugar and positioned under a broiler to caramelize the sugar for the forming a hard breakable top. This is one of the most fashionable dishes served.

125 g unsulphared dried apricots
4 egg yolks
150 ml orange juice
150 ml yogurt
½ cup sugar
1 tsp vanilla flavoring (extract)

Place the apricots and orange juice in medium bowl and soak for over 1 hour. Pour into a small saucepan, bring slowly to the boil and simmer for 20 minutes. Puree in a food processor or blender or chop finely and push through a strainer (sieve).
Add egg yolks and sugar and beat together until the mixture is light and fluffy. Place the yogurt in small pan, add the cream and vanilla and bring to the boil over a low heat.
Pour the yogurt mixture over the eggs, beating all the time then transfer to the top of a double boiler or the place the bowl over a saucepan of simmering water. Stir until the custard thickens.
Divide the apricot mixture between 6 ramekins and carefully pour on the custard. Cool, then leave in the refrigerator to chill.
Heat the grill or boiler to high. Sprinkle the sugar evenly over the custard and grill until the sugar caramelizes. Set aside to cool.
To serve the Apricot Brulee Recipe or Apricot Dessert, crack the hard caramel topping with the back of a tablespoon.
