125 g unsulphated dried apricots

4 egg yolks

150 ml orange juice

150 ml yogurt

½ cup sugar

1 tsp vanilla flavoring (extract)

Meringues, to serve (optional)

Place the apricots and orange juice in medium bowl and soak for over 1 hour. Pour into a small saucepan, bring slowly to the boil and simmer for 20 minutes. Puree in a food processor or blender or chop finely and push through a strainer (sieve).

Add egg yolks and sugar and beat together until the mixture is light and fluffy. Place the yogurt in a small pan, add the cream and vanilla and bring to the boil over a low heat.

Pour the yogurt mixture over the eggs, beating all the time then transfer to the top of a double boiler or the place the bowl over a saucepan of simmering water. Stir until the custard thickens.

Divide the apricot mixture between 6 ramekins and carefully pour on the custard. Cool, then leave in the refrigerator to chill.

Heat the grill or a double boiler to high. Sprinkle the sugar evenly over the custard and grill until the sugar caramelizes. Set aside to cool.
