  • 2 big lemons
  • 6 skinless, boneless chicken breasts, already trimmed and pounded till ¼” thick
  • 1 pinch salt
  • 1 pinch of black pepper
  • ½ cup of flour
  • 4 tbsp of olive oil
  • 1 small minced shallot
  • 1 cup of chicken broth, low sodium
  • 2 tbsp of drained capers
  • 3 tbsp of softened and unsalted butter
  • 2 tbsp of minced fresh parsley

  1. Cut 1 lemon Lengthwise. Trim ends of one half and cut into 1/8 inch thick slices; put aside. Squeeze out juice from the remaining lemon to get about ¼ cup of lemon juice and keep aside.

 

  1. Use pepper and salt to generously season both sides of your chicken breasts. Inside shallow pan or dish, place some flour. Coat each of the chicken breasts with flour and shake it to get rid of excess flour.
