Ingredients:

• 800 grams Meat (Majorly from arms and chest)

• 120 grams Raw papaya paste

• Salt to taste

• Fat from meat (100 Grams)

• 12 Green cardamom

• 1/3 teaspoon Black cardamom seeds

• 1 teaspoon White pepper

• 1 tablespoon Kashmiri chili

• 6 Clove

• 1 teaspoon Yellow Chili

• 1 teaspoon Rose petal

• 1/2 pinch Nutmeg

• Mace blade

• 10 piper cubeba

• 100 grams gram powder (preferably roasted )

• 1 teaspoon Cumin seeds

• 60 grams dried coconut
• 30 grams Cashew nut
• 120 grams Fresh cream
• 2 grams Saffron
• 4 tablespoon Rosewater
• 3 tablespoon Kewda water
• 25 grams Poppyseed
• 60 grams Khoya
• 90 grams Onion

 

Preparation Method:

• Use a grinder and take mincemeat, add fat to the mince.

• Extract the water content from the mince if any.

• Add papaya paste for marinating the mince.

• Add spice, and mix for 10 minutes.

• Use hands or a mixer.

• For kebab paste, add spice and the rose water.

• Add Pandanus odoratissimus water (Kewda) and saffron.

• Mix it for 45 minutes, mixtures should be thick.

• Take the wipe skewers.

• Skewers should be clean, use oil brush on skewers.

• Use minces meat to stick on the skewers.

• The mince should form a round shape, a kebab actually.

• Heat the grill, and place the skewers on the grill gently.

• Rotate the mince slowly, it will take 5 minutes.

• Remove the kebab from the skewer after the kebab turns brown.

• Serve kebabs with the sauces.
