Ingredients:

1.5 kg lamb ribs

1 cup tomato juice

2 tbsp lime rind, grated

½ cup lime juice 2 tbsp brown sugar

1 garlic clove, crushed

1 fresh red chili, seeded, finely chopped

 

Preparation Method:

Cut rib in racks into individual ribs.

Combine all the remaining ingredients in a large bowl; add ribs and cover and keep in the refrigerator for 3 hours or overnight.

Drain ribs and discard extra marinade.

Cook lamb ribs uncovered on the heated oiled barbecue until browned and cooked through.

Barbecue Lamb Ribs are ready, serve with green salad, salsa or desired pesto.
