To get the best flavor of the tomato sauce, use plum tomatoes to make the tomato sauce. If you are using canned tomatoes, make sure they are not already flavored with herbs. Wash and peel fresh tomatoes before using. Try to use fresh tomatoes for making this sauce.

Ingredients:

400g Fresh tomatoes

1 tbsp olive oil

1 tbsp butter

One small onion, finely chopped

1 garlic clove, finely chopped

1 celery stalk, finely chopped

Salt and black pepper

Basil leaves

Heat the olive oil and butter in a heavy saucepan

When the oil starts to bubble, combine the onion, garlic, and celery. Sauté gently for about 15-20 minutes or until the onions soften and just beginning to color.

Stir the chopped tomatoes into the sauce and bring to boil. Cover and simmer gently for 10-15 minutes, stirring occasionally until thick.

Roughly chop the basil leaves and stir into the tomato sauce. Adjust the seasoning with salt and pepper and serve hot.
