Ingredients:

Beef Curry Recipe

Lean and boneless beef cubes, 750 g

Ground coriander, 1 tsp

Ground Turmeric powder, 1 tsp

Chili powder, 1 tsp

Ground ginger, ½ tsp

Cooking oil, 2 tbsp

Onion, sliced, 1

Garlic clove, crushed, 1

Beef stock, 350 ml

Desiccated coconut, 1 tbsp

Lemon juice, 1 tbsp

Salt, to taste

 

Preparation Method:

Put the coriander, turmeric, chili, and ginger in a bowl and gradually add a little water, keep stirring all the time until a smooth paste is formed.

Heat the oil in a large heavy –based cooking pan, add the garlic (if using), onion and fry for 5 minutes until the onion is soft and lightly colored.

Stir the spicy paste and fry for another 3-4 minutes, keep stirring all the time.

Add the meat and fry for a further 3-4, stirring to cook on all the sides in the spices. Stir in the beef stock and bring to boil then lower the heat and stir in the coconut, lemon juice, and salt to taste.

Cover and simmer gently for 2 hours until the meat is tender.

Taste and adjust seasoning then serve Beef Curry hot straight from the cooking pan.

All curries have an infinitely better flavor if left to go cold overnight and are reheated the following day.

For extra “bite” add more lemon juice before serving.
