750g raw beetroot

200g boneless mutton pieces

Salt to taste

¼ horseradishe

125ml single cream

1 tbsp red wine vinegar

1 tsp sugar

Scrub the beetroots thoroughly under running water; do not break the beetroot skins. Parboil in plenty of salted water for 30 minutes. Cool in cold water and remove the skin.

Chop the beetroot in a food processor (not finely). Dice the meat finely and grate the horseradish.

Melt the butter in a large in a large saucepan and brown the meat. Add the beetroot and cook over on a medium heat, stirring occasionally.

Add the horseradish, cream, and salt to taste. Make seasoning with the vinegar and sugar. If you like you, garnish with soured cream.
