The Berry Vanilla Ice Cream Cake is a low fat cake that mostly comprise of natural fruits. The cake is light and fruity in nature.
Ingredients: Berry Vanilla Ice Cream Cake Recipe
For the cake:
- Cake flour 2 cups
- Baking powder 2 table spoon
- Salt 1/3 table spoon
- Vanilla bean 1
- Unsalted butter 11 table spoon
- Sugar 1- 1/4 cups
- Large eggs 4
- Large egg yolk, 1
- Buttermilk 3 table spoons
- Vanilla extracts 3 table spoons.
For the blueberry sauce:
- Blueberries 1/2 cup
- Sugar 3 table spoon
- Cornstarch 1 1/3 table spoon
- Cold water 2 table spoon.
- Freshly squeezed lemon juice 2 table spoon.
For the strawberry sauce:
- Strawberries 4 ounces
- Sugar 1 1/3 table spoon
- Squeezed lemon juice ½ table spoon
- Vanilla bean ice cream, 2 1/3 cups
For the whipped cream frosting:
- Heavy cream 3 cups
- Confectioners’ sugar 1/3 cup
- Vanilla extracts 1 table spoon.
- Fresh strawberries As per requirement
- Blueberries As per requirement
Preparation Method: Berry Vanilla Ice Cream Cake Recipe
Preheat the oven at 360 ˚ F.
Take 2 pans and add parchment paper to the base of the pan.
Add the oil to the base using the spray.
Take a bowl and add flour with the baking powder and the salt.
Whisk the mixture together for few minutes and keep the bowl aside.
Take a mixer and add the butter.
Add the vanilla beans to the mixer and then the butter.
Beat the mixture for next 5 minutes.
Wait for the mixture to turn light in color.
Add the sugar to the mixture that is already prepared.
Add the eggs yolk.
Mix the vanilla and the butter milk together in a separate cup.
Take the mixer again and add the wet and the dry ingredients together.
Mix all the ingredients for 30 seconds.
Take the prepared pans and add the batter into two equal parts.
Place the pan into the oven and bake for 25 minutes.
Allow the pans to cool down.
Remove the dome of the cake and the edges using a knife.
Take the plastic paper and wrap the cake until the next use.
To make the sauce, take a bowl and add blue berries and sugar.
Mix all the ingredients and place into a sauce pan.
Heat the sauce pan for few seconds
Keep string the ingredients until the juice start extracting,
Take a small bowl and add water with the corn starch and the water.
Mix all the ingredients together and heat for 80 seconds.
Wait for the mixture to cool
To make strawberry sauce, add sugar and the strawberries in a separate bowl.
Mesh the berries using s a spoon.
Cover the bowl and wait for the sauce to cool down in a freezer.
Take the cooled cake out o f the freezer and place it in spring form pan.
Add the parchment paper to the base.
Add the softened ice cream over the bottom cake layer.
Add the blueberry and the strawberry filling over the ice cream cake.
Cover the cake from all the sides.
Take a bowl and add heavy cream and whisk the cream.
Add the sugar and vanilla.
Take a bag and add cream.
Use the cream for the decorative purposes.
Place the cake into the freezer and wait for few hours.
Cut the Berry Vanilla Ice Cream Cake just before the serving using a hot knife.
