Black Bean Nacho Burgers Recipe

1 cup of finely crushed tortilla chips (blue corn is preferable)

1/15 ounce can of drained and rinsed black beans

1/3 cup of salsa and more for serving

½ cup of 50 percent grated reduced-fat cheddar

1 big egg, beaten lightly

1 scallion, finely chopped green and white part

¼ teaspoon of black pepper

4 hamburgers buns

2 teaspoons of vegetable oil

4 lettuce leaves

With the help of potato marcher or food processor, mash the beans till crunchy and ensure you leave part of it whole. Put in crushed chips, cheddar, salsa, egg, black pepper, and scallion. Keep the mixture by the side for 10 minutes and mode into 4 patties.

Put the patties on a plate and cover with plastic wrap then, refrigerate for at least 30 minutes or even overnight.

Preheat oven to 350o then the buns on baking sheet and heat inside oven till warm to touch or continue to heat for 4-6 minutes.

Heat the oil in a large nonstick frying pan on medium heat. Put in patties inside the pan and continue to cook till turn golden brown on one side or continue to head till 4 – 5 minutes. Remove from the oven, top with lettuce and salsa and serve on buns if you so desire.
