- 6 graham crackers of about 2 ½-2 by 5” each
- 1/3 cup of whole almonds
- 1 ¼ cups of sugar
- 4 tbsp of melted unsalted butter
- 2 bar of 8 oz reduced fat cream cheese at room temperature
- ½ cup of reduced-fat sour cream
- 1 large egg
- ½ tsp of pour vanilla extract
- Pinch salt
- 4 red plums
- 1 tbsp of fresh lemon juice
- 1 pint of 2 cups of blueberries.

To make the crust:
Preheat the oven to 350o C. Grind1/4 cup of sugar, almonds and graham crackers using a food processor; put the butter and process till moistened. Transfer the mixture to 9” removable tart pan with removable bottom. With the base of a dry measuring cup, firmly press the mixture into the bottom and the upper side of the pan. Freeze for about 15 minutes.
To make the filling and bake:

Gently wipe the processor blade together with the bowl clean. Put the cream cheese, ½ cup of sugar, sour cream, egg, salt and vanilla inside a food processor and blend until smooth. Place the tart pan on the rimmed baking sheet; fill it with cheesecake mixture. Bake till filing is set or continue to about 30 to 35 minutes. Transfer tart pan to a wire rack and allow to completely cool.
Prepare the topping: Inside medium saucepan, mix together ½ cup of sugar, plums and lemon juice. Continue to cook over medium-high heat till simmer and ensure you frequently stir till the mixture becomes jamlike and start to move around the pan in a mass when you stir for 15 – 25 minutes. Keep aside 1 tbsp of cooking liquid for the blueberries and allow the remaining plum mixture to cool.
Assemble the Tart: Keeping 1-inch, go ahead and spread cool the mixture over tart. Heat the reserved plumb again until it turns to liquid. Inside a bowl of medium size mix together with blueberries and spread on top of the plums mixture. Chill the mixture until it is set to be served or just 2 hours.
