Butter Bean Watercress Herb Dip is a refreshing dip that is especially good served with fresh vegetables crudités and breadsticks.


SERVES        4-6



Butter Bean Watercress Herb Dip

225 g or 1 cup cottage cheese

400 g  butter beans, rinsed and drained

1 bunch spring onion, chopped

50 g watercress, chopped

4 tbsp mayonnaise

3 tbsp mixed herbs, chopped

Salt and freshly grounded black pepper

Watercress sprigs, to garnish

Vegetable crudités and breadsticks, to serve


Preparation Method:

Butter Bean Watercress Herb Dip

Put the cottage cheese, butter beans, watercress, spring onions, mayonnaise and herbs in a blender or food processor and blend until finely smooth.

Season with salt and black pepper and spoon the mixture into a dish.

Cover and chill for several hours before serving.

Transfer to a serving dish or individual plates and garnish with watercress sprigs.

Serve Butter Bean, Watercress and Herb Dip with vegetables crudités and breadsticks.
