Butternut squash soup recipe is healthy and yummy and good for winter season. This veggie soup will be ready within 30 minutes and requires simple ingredients. Serve the soup with swirl of crème fraîche.



Butternut Squash Soup Recipe

Butternut squash, peeled, seeded and cut into chunks, 1 kg

Apple, peeled, seeded and cut into chunks, 1 medium

Olive oil, 1 tbsp

Onion, chopped, 1 cup

Vegetable broth, 4 cups

Curry powder, 1 tbsp

Cinnamon powder, a pinch

Coconut milk (optional), ¾ cup

Salt to taste

Freshly ground pepper, to taste


Preparation Method:

Cook, Apple, onion, and garlic in olive oil over medium heat until browned.

Add the remaining ingredients except for salt and pepper. Cover the pot and simmer the mixture for 20-25 minutes until butternut squash is tender.

Remove from the heat and cool it for 30 minutes or until cool enough to blend.

Add batches of butternut squash to the blender and puree with the extract blade until smooth.

When the fine paste is ready, return the blended soup to pot, add coconut milk (optional) and heat until hot.

Butternut Squash Soup is ready, add salt and pepper to taste. Enjoy!
