• 2 large pink or red grapefruits
• 1 cup of sugar, with addition needed for tossing

1. From grapefruits cut peel into a ¾-inch strips leaving only ¼-inch white pith attached. Place inside a small saucepan; punt in cold water to submerge. Allow to cook, drain and do it again two times.
2. Bring ½ cup of water, peel, 1 cup of sugar and allow it to cook inside same saucepan; bring the heat down and allow it to boil till the peel turn translucent or heat for about 15 to 20 minutes. Remove water and put the peel into wire rack and allow to dry for remain there for about 2 to 4 hours. Put in more of the sugar.
