Cassata is a traditional dessert of Sicily, Italy.  Cassata Icecream recipe is consist of quality Ice cream layers. Anyone can eat a bigger quantity as it is delicious and creamy. It is a very simple recipe and I am sure cassata ice cream will win hearts of all ages.

 

Ingredients:

Cassata Icecream Recipe

Plain chocolate pieces, 300 g

Freshly chilled custard, 200 g

Whipping cream, 150 ml

Pistachio ice cream, 275 g

Strawberry Ice cream, 275 g

Shelled pistachios, toasted, 25 g

Candied peel, finely chopped, 50 g

Glace cherries, 25 g

 

Preparation Method:

Line a 452 g loaf tin with clingfilm. Place in the freezer. Melt 100 grams of the chocolate into a heat resistant proof bowl set over a saucepan of simmering water, blend until smooth then make it cool. Place the custard into a bowl.

Stir in the cream and the chocolate and stir until mixed. Spoon it into a shallow lidded freezer box and transfer to the freezer. Every 2 hours remove from the freezer and using an electric beater, whisk thoroughly. Repeat 3 times then leave until frozen solid.

Remove the chocolate ice cream from the freezer and allow it to soften. Remove the loaf tin from the freezer and press the chocolate ice cream into the bottom of the tin, press down well and allow it to come up the sides of the tin. Return to the freezer and leave until solid.

Soften the pistachio ice cream then beat in the pistachios, candied peel, and cherries. Spoon into the tin, pressing down well and smooth the top. Return to the freezer until hard. Soften the strawberry ice cream and spread on to the pistachio ice cream. Smooth the top. Return to the freezer for at least 2 hours or until completely solid.

Meanwhile, melt the remaining chocolate, stir until smooth and cool slightly. Remove the loaf tin from the freezer. Dip into hot water and turn on to a serving dish. Use a teaspoon, drizzle the chocolate over the ice cream in a random pattern. Return the Cassatta Ice Cream to the freezer until the chocolate has set. Dip a knife in hot water and use to slice the Cassatta Icecream. Serve immediately.
