This is a delicious way to cook cauliflower with greens or without greens.
Ingredients: Cauliflower with Greens
175 g cauliflower, cut into florets
2 spring onion, cut into pieces
125 g green leaves, like spinach, bok choy or mustard green
1 garlic clove
½ tsp turmeric
1 tsp mustard seeds
1 tbsp cooking oil
Preparation Method: Cauliflower with Greens
Blanch the cauliflower, rinse in cold running water and drain, set aside.
Grind the garlic, turmeric and coriander together in a spice grinder or use a pestal and mortar.
Heat the oil in a large frying pan. Add the spring onions and stir over a high heat for 32 minutes. Add greens and stir for 1 minute. Set aside.
Return the frying pan to the heat and add the mustard seeds. Stir until they start to pop then add the spices mixture and the cauliflower florets and stir until all the cauliflower is coated.
Serve cauliflower with the greens on a warmed serving plate.
