If you are watching your diet for any reason, cauliflower vegetable is for you. Cauliflower is low in fat, high dietary fiber, contains no starch and it is a good source of Vitamins. Cauliflower with potatoes recipe or Aloo Gobi is a healthy vegetable recipe.  Aloo Gobi recipe is originated in Punjab but this is a favorite vegetarian recipe across India and Pakistan.

 

Ingredients:

Cauliflower with potatoes recipe | Aloo Gobi Recipe

Cauliflower cut in florets, ¼ kg

Potatoes, diced, ¼ kg

Tomatoes, chopped, 2

Onion, chopped, 1

Turmeric powder, 1 tsp

Ginger and garlic paste, 1 tsp

Red Chili powder, 2 tsp

Coriander powder, 1 tsp

Green chili, chopped, 4

Cooking oil, 1/2 cup

Salt, to taste

Fresh coriander, chopped, 2 tsp

Water, 1 cup

 

Preparation Method:

Blend onion and tomatoes in a blender or food processor. Heat the oil in a pan and fry ginger and garlic paste, add the blended mixture of onion and tomatoes. Add turmeric powder, salt, red chili, and coriander powder and cook for 5-7 minutes.

Add cauliflower, potatoes and green chilies, mix and add I cup of water. Cover the pan and cook on low heat till vegetables are tender.

Aloo Gobi is ready, sprinkle with chopped coriander and serve warm.
