Celery is available all year round in two basic varieties, white and green. The flesh stalks are rich in vitamin C and also contain an extremely large amount of potassium. Fresh celery has crisp stalks and green leaves. Because of its crunchiness celery is very good raw, especially with cheese, when it is cooked the flavor intensifies and it is eaten as a vegetable or added to stews and soups.
