225 g elbow macaroni
50 g butter or margarine
1 tbsp plain flour
¼ tsp dry mustard
350 ml milk
1 small onion, finely chopped
225 g Cheddar cheese, grated
25 g dried wholemeal breadcrumbs
Salt and black pepper
Extra grated cheese (optional)
Parsley to garnish

Cook macaroni conventionally according to instructions on the packet. Drain in colander.
Meanwhile, take a soufflé to bowl place the butter or margarine. Cover and Heat on high power for45 seconds or until melted. Add onion and stir to coat. Again cook on high for 2 minutes or until onion is soft.
Into onion mixture, add flour, mustard, salt, and black pepper, mix until smooth and blended. Cook on high power for 1 minute, stirring halfway through cooking.
In the ready mixture, gradually stir milk and cook for about 4 minutes until mixture thickens and become smooth. During this process stir the mixture twice. Remove from the microwave oven and add cheese. Blend the sauce until cheese melts.
Add drained macaroni to the cheese sauce. Cook on high power for 5-7 minutes until hot, not to forget to rotate twice during cooking. Allow standing on the heatproof surface for 5 minutes.
On to the macaroni mixture, sprinkle dried wholemeal breadcrumbs and if you like, spread extra grated cheese. Cook on high power for 30 seconds. If you like surface brown, keep the disk under a preheated grill.
Cheese and Macaroni dish is ready, garnish before serving.
