Ingredients:

1 kg potatoes

¼ cup butter or margarine

1 onion, finely chopped

2 leeks, finely chopped

1 ½ cups Cheddar cheese, grated

One egg, beaten

1 tbsp fresh parsley, chopped

2 tbsp water

1 ½ cups breadcrumb

Vegetable oil for shallow frying

Salt and pepper

Fresh parsley sprigs, to garnish

Mixed green salad, to serve

Cook the potatoes in lightly salted boiling water until tender, Drain and mash them with the milk and butter or margarine.

Cook the onion and leeks in a small amount of salted boiling water for about 10 minutes until tender. Now drain.

In a large mixing bowl, combine the onion and leeks with the scrambled potato, grated cheese, and parsley or fresh chives.

Beat the egg and water together in a shallow bowl. Sprinkle the breadcrumbs into a shallow bowl. Shape the potato mixture into 12 even-sized round shape kebabs. Brush all the kebabs with the egg mixture then coat with the breadcrumbs.

Heat the oil in a large frying pan and fry the potato kebabs gently for about 2-3 minutes on each side until becoming light brown.
