Chicken is one of the popular meats eaten each part of the world. Chicken Bitki is a popular Polish dish and makes an attractive starter when added mushrooms and offset by deep red beetroot and vibrant green salad leaves.
Ingredients: Chicken Bitki Recipe
350g chicken breast, minced and finely chopped
1 tbsp butter, melted
115g flat mushroom, finely chopped
1 cup fresh white breadcrumbs
2 eggs, separated
¼ tsp grated nutmeg
2 tbsp plain flour
3 tbsp oil
Salt and black pepper
Salad leaves and pickled beetroot, to serve
Preparation Method: Chicken Bitki Recipe
Melt butter in a pan and fry the mushrooms for about 5 minutes until soft and the juices have evaporated. Allow to cool.
Combine the mushrooms and the breadcrumbs, the chicken, egg yolk, nutmeg, salt and black pepper together.
Whisk the egg whites until stiff. Stir half into the chicken mixture to slacken it then fold in the rest.
Shape into 12 even-sizes long rolls. Now coat all the rolls in the flour.
Heat the oil in a frying pan and fry the Chicken Bitki for about 10 minutes, turning until evenly golden brown and cooked through. Serve hot with salad leaves and pickled beetroot.
