Chicken Kebabs Recipe | Chicken Kebabs with Coriander Pesto

 

Chicken kebabs recipe is simply delicious; beautifully barbecued or grilled chicken on skewers makes a perfect treat and enjoyment to welcome the warmer weather. These Middle Eastern-inspired Chicken kebabs are yummy and easy to prepare and are ideal for any BBQ or picnic party. These kebabs are perfect to serve with pita bread and coriander Pesto.

Cooking Time: 15 minutes

 

Ingredients:

Chicken Kebabs with Coriander Pesto

700 g chicken breast fillet, chopped coarsely

2 tsp lemon/lime rind, finely grated

2 tsp lemon/lime juice

1 tbsp peanut oil

¼ cup unsalted peanuts, toasted and crushed

 

Coriander Pesto

½ cup fresh coriander leaves

2 tbsp unsalted peanuts, toasted

2 garlic cloves, crushed

½ cup peanut oil

Chicken Kebabs with Coriander Pesto

Combine lemon rind, lemon juice, coriander, oil, and chicken fillets in a large bowl. Cover and refrigerate for 4 hours or overnight.

Drain chicken and discard marinade. Thread chicken pieces onto 12 skewers.

Now start cooking chicken on the heated oiled barbecue until browned all over and cooked thoroughly.

 

Coriander Pesto

Blend all the ingredients in a blender until combined well.

If you are using a bamboo skewer, soak in water for at least 1 hour before using, to avoid scorching.
