Chicken Pasta with Spinach dish is a great way to use up any leftover roast chicken.  This chicken pasta with spinach is super quick to make and it is delicious hot or cold as a salad. Moreover, when you guzzled down spinach, it will be a fantastic source of iron and antioxidant vitamin A. It is also full of calcium and magnesium – vital for healthy bone maintenance.

Ingredients:

Chicken Pasta with Spinach

400g Pasta

2 cooked chicken breast

2 tbsp olive oil

200g spinach

2 garlic clove, crushed

250g cherry tomatoes halved

50g pine nuts, toasted

½ lemon juice

 

Preparation Method:

Chicken Pasta with Spinach

Cook the pasta according to the packet instructions. Five minutes before the end of cooking time, heat the oil in a saucepan and fry the garlic for 1 minute to soften. Add the cherry tomatoes, spinach, and chicken slices.

Season well with the salt and freshly ground black pepper and toss gently until the spinach is wilting and tomatoes are beginning to soften. Stir the pine nuts though.

Drain the pasta, then toss through with the tomatoes and spinach and squeeze over the lemon juice.

Serve Chicken Pasta with Spinach immediately with an extra glug of olive oil or leave cool and serve as a salad. You can keep in the fridge for up to 24 hours.
