Sajji is one of the famous and delicious dishes of Balochistan province, Pakistan. People used to put the marinated whole lamb, stuffed with white rice in skewers and roast the appealing dish over coals. However, in other parts of the country, the spicier form of Sajji is available as well. Chicken is easy to cook and takes less preparation time, so people prefer to make Chicken Sajji (Balochi Recipe) at home.

Ingredients:

  • Rinsed whole Chicken 900 grams
  • Lemon Juice 2 tbsp
  • Oil 2 tbsp
  • Ground Pepper
  • Salt

 

Chicken Sajji Masala Ingredients

  • Black Peppercorns 2 tbsp
  • Sea Salt ½ tsp
  • Rock Salt ½ tsp
  • Cardamom 6
  • Cumin Seeds 2 tbsp
  • Coriander Seeds 3 tbsp
  • Pomegranate Dry Seeds 4 tbsp
  • Mango Powder Dry 3 tbsp

 

How to Make Chicken Sajji Masala

Take all the ingredients in a pan and dry roast on medium heat. Keep on stirring the ingredients for two minutes. After that, leave the ingredients for 5 minutes to get cool. Add the sea or rock salt and grind the spices. You can store these ingredients or Masala in an airtight jar for the next use.

Preparation Method

Apply salt, lemon juice, and black pepper on the chicken from the outer and inner sides.

Brush the whole chicken with oil. If you have enough time, store the marinated chicken in the fridge for 7 to 8 hours.

Remember, by leaving the marinated chicken for the maximum time, you can add more taste to your dish.

Preheat the microwave to 375F or 190C. Check the chicken by inserting a Bamboo Skewers Stick or knife to check the tenderness.

Chicken is well-cooked when you can easily pull the thigh meat.
