Today, we are sharing a deliciously mouthwatering recipe that was discovered during my visit to Mexico, you call it as Mexican Chicken Recipe, which was introduced when my host cooked it for us on the Eve of New Year.

We knew that we can recreate this Mexican Chicken Recipe at home.

The chicken recipe ingredients may look to have a long list if you have a closer look than you’ll realize that a large portion comprises with dried spices. Otherwise, there are a few main ingredients that you will need to make your own rich Chicken Recipe.

Ingredients:

4 chicken legs

200g red onions

300ml chicken stock

5 cloves, garlic

400g thin leeks

½ tbsp chili powder

A large red pepper

1 pinch cinnamon

One pinch allspice

1 pinch star anise

2 pinch ground coriander

Salt to taste

8 tbsp Cooking oil

50g covertures chocolate, grated

Cornflour, as required

Honey, to taste

Nutmeg, to taste

Preparation Method:

 Rinse the chicken and dry, now cut through the chicken legs at the joint and divide into 2 halves. Combine all the spices and rub the mixture on all side of the chicken.

Heat the oil in pan and brown the chicken pieces on all sides. Add salt according to taste. Peel the onions and cut into wedges and add to the pan. Fry for a moment, then include the stock, reserving 3-4 tablespoon. Add the whole garlic cloves in the pan, then add just enough water to cover the chicken pieces. Wash the leeks and cut the leeks into small pieces and add to the pan.

Mix the chocolate and chili smoothly with the remaining chicken stock and add in the pan. Simmer gently for about 20 minutes.

Meanwhile, wash and cut the pepper into bite-sized pieces. Add to the chicken stew 5 minutes before the end of cooking time. Thicken with little cornflour if necessary and add honey and nutmeg to taste.

Serve Chili Chocolate Chicken hot.
