Chinese Style Chicken Salad is one of the super easy recipes that can be made at home. This salad recipe is light and crunchy and has an impressive look and delicious taste. I always prefer to entertain my guests with Chinese chicken salad as it has flavorful ingredients.
Ingredients:
Chinese Style Chicken Salad
Boneless chicken breasts, 175 g
Dark soy sauce, 4 tbsp
Chinese 5 spices powder, a pinch
Lemon juice, 3 tbsp
Sunflower oil, 3 tbsp
Sesame oil, 2 tbsp
Sesame seeds, 1 tbsp
Cucumber, peeled, cut into matchsticks, ½
Carrot, cut into matchsticks, 2
Spring onion, shredded, 8
Bean sprouts, 1 cup
Salt, to taste
For the sauce:

Crunchy peanut butter, 4 tbsp
Lemon juice, 2 tsp
Sesame oil, 2 tsp
Hot chili powder, ¼ tsp
Spring onion, finely chopped, 1
Preparation Method:
Chinese Style Chicken Salad
Place the chicken portions in a large cooking pot and just cover with water. Add 1 tsp soy sauce, the Chinese 5 spices powder, and lemon juice. Cover and bring to boil then simmer for about 20 minutes.
Meanwhile, place the cucumber in a strainer, sprinkle with the salt and cover with a plate and weight on pot. Leave to drain for about 30 minutes.
Lift out the boiled chicken with a slotted spoon and leave until cool enough to handle. Remove and discard the skins and knock the chicken lightly with a rolling stick to loosen the fibers. Slice into thin strips and reserve.
Heat the oil in a large frying pan. Add sesame seeds and fry for 30 seconds and then stir in the remaining 3 tbsp soy sauce. Add the carrot matchsticks and stir-fry for about 2-3 minutes until just tender. Remove the frying pan from the heat and reserve until required.
Rinse the cumber well, pat dry with kitchen paper and place in a bowl and add spring onions, cooked carrots, bean sprouts, remain juice of pan and shredded chicken and mix together. Transfer to a shallow plate. Cover and chill for about 1 hour, turning the mixture in the juices once or twice.
For the sauce, mix the peanut butter with lemon juice, sesame oil, and chili powder. Add a little hot water to form a paste then stir in the spring onion.
Arrange the chicken mixture on a serving plate and serve with the peanut sauce.
