Ingredients: Chocolate Cheese Cake Recipe
Dark chocolate biscuits 12 biscuits (Finely crushed)
Butter, melted 150 g
Cottage cheese 225 g
Full fat soft cheese 225 g
Caster sugar 50 g
Lemon juice ½
Vanilla essence ¼ tsp
Single cream 300 ml
Gelatin powder 1 tbsp
Warm water 3 tbsp
Plain dessert chocolate, broken pieces 75 g
Preparation Method: Chocolate Cheese Cake Recipe
Mix the crushed biscuits with the butter. Press on to the base and sides on an oiled 8 inch loose-bottomed cake tin. Cover and chill for 30 minutes until firm.
To make the filling: Chocolate Cheese Cake Recipe
Press the cottage cheese through a nylon sieve into a mixing bowl. Add the soft cheese and beat with a wooden spoon until well combined.
Add the sugar, lemon juice, vanilla and cream and mix well.
Sprinkle the gelatin over the water in a heatproof bowl. Leave to soak for 2-3 minutes until spongy. Place the bowl over a saucepan of simmering water and stir the gelatin has dissolved.
Remove from the heat, leave to cool slightly then stir gradually into the cheese mixture.
Put the chocolate pieces in a heatproof bowl and place over a saucepan of lightly simmering water. Keep giving heat until the chocolate has melted.
Pour the cheese mixture on top of the biscuit crust then drizzle the melted chocolate over and swirl in with the point of a skewer (What point).
Cover and chill for about 3 hours. (Freezing)
To Serve: Run a knife round the edge of the cake, carefully remove the sides of the tin and slide the cheesecake on to a serving plate. Serve chilled.
Cook’s Note: Chocolate Cheese Cake Recipe
It takes 20 minutes for preparation. Allow 30 minutes for chilling the biscuit crust and 3 hours for the cheese cake.
Once the cheesecake has set, open freeze until solid then remove from the tin and wrap in cling film or foil. You can store for up to 1 month. To serve, unwrap and then defrost over-night in the fridge. Decorate the top with fruit or chocolate just before serving.
