Ingredients: Coconut Cream Pie Recipe

 
 1/3 of sugar
 4 egg yolks
 2 cups of whipping cream
 3 tablespoons of butter
 2 ½ teaspoons of vanilla extract which should be divided
 2 cups of half-and-half
 1 cup of sweetened flaked coconut
 ½ cup of sugar
 ½ (15-oz) package of refrigerated piecrusts
 3 tablespoons of butter
 ¼ cup of cornstarch
 Garnish with toasted coconut

 

 

Preparation Method: Coconut Cream Pie

 With 9” pie plate fit in 1 piecrust following direction for packaging; fold the under edges as well as crimp. Prick the lowest part and sides of the piecrust using a fork. Then you can go ahead and bake following direction on the package for your 1-crust pie.

 

 Mix ½ cup of sugar and cornstarch into a heavy saucepan. Beat together your half-and-half together with your egg yolks. Gently beat your egg mixture inside the sugar mixture and bring them to boil on an average heat. Beating constantly while it boils for one minute. Then remove from heat.
 Turn the butter, 1 teaspoon of vanilla and 1 cup of coconut and cover with plastic wrap. Ensure you place the plastic wrap on the filling on the pan; allow it to stay for 30 minutes. You can spoon your custard mixture into already prepared crust. Close it down and allow to chill for 30 minutes or until the mixture set.

 

 Whisk your whipping cream at high speed using electric blender or continue until it is foamy; gently put 1/3 cup of sugar followed by the 1 ½ teaspoons of vanilla that remains and ensure you beat constantly until you get soft and peaks mixture. You will now need to pipe whipped cream or spread over your pie filling. Lastly, you can garnish with toasted coconut if you want.
