Use a vegetable peeler to peel the ginger and finely chop it along with onion, garlic and chilies.

Heat the cooking oil in a large shallow saucepan. Add the ginger, garlic, onion, chilies and cumin seeds. Cook for about 5 minutes until the onion is softened but not colored.

Stir the red lentils, water and curry paste into the saucepan. Bring to the boil, cover and cook gently over a low heat for about 15-20 minutes. Keep stirring occasionally until the lentils are just tender and not yet broken up.

Stir in coconut cream but keeping 2 tbsp for the garnishing. Bring to the boil and cook, uncovered for a further 15-20 minutes until the mixture is thick and pulpy. Put off the heat, stir in the lemon juice and coriander leaves. Combine with salt and pepper to taste.

Heat a large frying pan and cook the flaked almonds for 2 minutes on each side until golden brown. Stir about three-quarters of the toasted almonds in the red lentil.

Transfer the Red Lentil Curry or Masoor ki Daal to a serving bowl, swirl in the remaining coconut cream. Scatter the reserved almond on top and served warm.
