Red Lentil Curry Recipe is a warm spicy dish; this can be served as a main dish with warm pita bread, rice or nan. It can be served as an accompaniment to other dishes.

This red lentil dhal recipe is very simple to make with everyday pantry. Massor Daal recipe is a healthy vegan curry that is loved most part of the India and Pakistan.

Ingredients:

200g red lentil

2in piece fresh root ginger

2 garlic cloves

1 onion

1 tbsp hot curry paste

2 small red chilies, seeded

2 tbsp cooking oil

1 tsp cumin seeds

1 cup coconut cream

¼ cup almond flaked

1 lemon juice

1 cup water

Salt and black pepper

Fresh coriander leaves

Use a vegetable peeler to peel the ginger and finely chop it along with onion, garlic, and chilies.

Heat the cooking oil in a large shallow saucepan. Add the ginger, garlic, onion, chilies and cumin seeds. Cook for about 5 minutes until the onion is softened but not colored.

Stir the red lentils, water and curry paste into the saucepan. Bring to the boil, cover and cook gently over a low heat for about 15-20 minutes. Keep stirring occasionally until the lentils are just tender and not yet broken up.

Stir in coconut cream but keeping 2 tbsp for the garnishing. Bring to the boil and cook, uncovered for a further 15-20 minutes until the mixture is thick and pulpy. Put off the heat, stir in the lemon juice and coriander leaves. Combine with salt and pepper to taste.

Heat a large frying pan and cook the flaked almonds for 2 minutes on each side until golden brown. Stir about three-quarters of the toasted almonds in the red lentil.

Transfer the Red Lentil Curry or Masoor ki Daal to a serving bowl, swirl in the remaining coconut cream. The Red Lentil Curry Recipe is ready. Scatter the reserved almond on top and served warm.
