A version of a popular Mediterranean recipe, this cooked salad is served as a side dish to accompany the main course. Make cooked salad recipe, the day before to enhance the favor.

Ingredients:

2 well-flavored tomatoes, quartered
2 onion, chopped
½ cucumbers, halved in length-ways, seeded and sliced
1 green pepper, halved, seeded and chopped
2 tbsp lemon juice
3 tbsp olive oil
2 garlic cloves, crushed
2 tbsp freshly chopped coriander
Salt and black pepper
Coriander sprigs, to garnish

Put the tomatoes, onions, cucumber, and green pepper into a pan, add 4 tbsp water and simmer for 5 minutes. Leave to cool.
Mix together the lemon juice, olive oil, and garlic. Strain the vegetables then transfer to a bowl.
Pour over the dressing, season with salt and black pepper and garnish with chopped coriander. Serve cooked veggie salad at once.
