A Thai-style Crispy Fried Vegetable Recipe with sweet sauce makes the perfect accompaniment to fresh vegetables coated in a light batter and deep fried. A great snack recipe of vegetables will satisfy the carving of vegetarians.

Ingredients:

500g selection of vegetables such as broccoli, cauliflower, mushrooms, zucchini (courgettes), bell pepper, baby sweetcorn or any other, cut into even-sized pieces.

For Batter

1 cup plain flour

1 tsp baking powder

½ tsp salt

1 tsp caster sugar

3 tbsp vegetable oil

1 cup warm water

 

Crispy Fried Vegetable Recipe

For Sweet Sauce

6 tbsp light malt vinegar

2 tbsp Thai fish sauce or light soy sauce

1 tbsp light brown sugar

Pinch of salt

2 tbsp water

Two pcs garlic cloves, crushed

2 tbsp grated ginger

Two red chilies, deseeded and finely chopped

2 tbsp fresh coriander (cilantro), chopped

To make the batter, sift the flour, sugar, salt, and baking powder into a large bowl. Add the oil and water. Now whisk together and make a smooth batter, adding extra water, if required to give it the consistency of single cream. Make it chill for 30 minutes.

Meanwhile, you start preparing the sweet sauce. Combine the vinegar, sugar, salt, fish sauce or soy sauce and water and heat it on a medium flame until boiling. Remove from the heat and leave to cool.

Mix together the ginger, garlic, chilies and fresh coriander in a small serving bowl. Add the cooled vinegar mixture and stir together.

Heat the vegetable oil in a deep-fryer or in a wok for deep-frying. Dip the prepared vegetables in the ready batter and fry them in batches until crisp and golden for about 2 minutes. Drain on paper towels.

Serve the Crispy Fried Vegetables accompanied by the dipping sweet sauce.
