Camembert triangle portions, 4
Plain flour, 15 grams
Egg, 1
Fresh white breadcrumbs, 15 grams
Salt, to taste
Ground black pepper, as desired
Blanched almond (finely chopped), 25 grams
Preparation Method:

Chill the cheese portions in the freezer for about 30 minutes
Put the flour in a large polythene bag; season with salt and pepper.
Lightly beat the egg in a shallow dish. Mix together the breadcrumbs and almonds and spread out on a flat plate.
Add the cheese to the flour and shake well until well coated. Dip them into the egg and later into the breadcrumbs. Coat the portions in the egg and breadcrumbs again until evenly coated. Put on a plate and refrigerate for 30 minutes.
Pour enough oil into a deep-fat frier to cover the cheese. Heat to 180C/350F, or until a stale bread cube browns in 60 seconds.
Using a slotted spoon, lower the cheese into the hot oil and deep fry for 30-60 seconds until the coating begins to turn golden. Drain on the absorbent paper and serve at once, with the salad.
