Although this chilled soup is not an authentic Indian dish, it is wonderful served as a cooler between hot spicy courses.
Preparation Time 2 hours
Ingredients: Cucumber and Tomato Soup
4 tomatoes, peeled and deseeded
1 small cucumber, peeled, deseeded and chopped
1.5kg watermelon flesh without seeds
2 spring onions, green part only, chopped
1 tbsp fresh mint, chopped
Salt and pepper
Mint sprigs, to garnish
Preparation method: Cucumber and Tomato Soup
Cut the 1 tomato in halve, remove seeds and diced into small pieces
Put the remaining 3 tomatoes into food processor or blender; add cucumber, water melon and spring onions. Blend it until smooth.
Add salt and pepper to taste
Chill the cucumber and tomato soup overnight in the refrigerator. Check the seasoning again and transfer to a serving dish. Garnish with mint sprigs.
