Although this chilled Cucumber and Tomato Soup is not an authentic Indian dish, it is wonderful served as a cooler between hot spicy courses.

Ingredients:
Cucumber and Tomato Soup
4 tomatoes, peeled and deseeded
1 small cucumber, peeled, deseeded and chopped
1.5kg watermelon flesh without seeds
2 spring onions, green part only, chopped
1 tbsp fresh mint, chopped
Salt and pepper
Mint sprigs, to garnish
Preparation method:
Cucumber and Tomato Soup
Cut the 1 tomato in half, remove seeds and diced into small pieces
Put the remaining 3 tomatoes into a food processor or blender; add cucumber, watermelon and spring onions. Blend it until smooth.
Add salt and pepper to taste
Chill the soup overnight in the refrigerator. Check the seasoning again and transfer to a serving dish. Garnish with mint sprigs.
