Curried Carrot and Apple Soup Recipe is a delicious soup recipe with fresh produce carrot, Apple and addition of vibrant Indian-inspired flavor. I learned this recipe during my stay in Europe but I made a variation in this soup recipe.
Ingredients: Curried Carrot and Apple Soup Recipe
Carrot, chopped, 500 g
Cooking apple, chopped, 1
Sunflower oil, 2 tbsp
Korma curry powder, mild, 1 tbsp
Onion, chopped, 1 large
Chicken stock, 750 ml
Salt, to taste
Black pepper, to taste
Low-fat yogurt, to garnish
Carrot curls, to garnish
Preparation Method:
Curried Carrot and Apple Soup Recipe
Heat the sunflower oil and softly stir fry curry powder for about 3 minutes.
Add the carrot, apple, and onion, stir well then cover the saucepan.
Start cooking on a low heat for nearly about 12-15 minutes, stringing the pan a few times until it is softened. Shift the vegetable mixture into a blender or food processor then add half the chicken stock and process until smooth.
Bring back the smooth mixture to the saucepan and add in the remaining chicken stock. Again, return the soup low heat to the boil and make some adjustments of the seasoning if required before serving in the serving soup bowls. Garnish with few curls of carrot and with a swirl of yogurt.
