Pudding rice, 50 g

Milk, 600 ml

Margarine or butter, 15 g

Pressed date, chopped, 50 g

Orange grated zest, 1

Melted margarine, for greasing

 

Preparation Method:

Heat the oven to 150 C. Brush the oven proof pie dish with melted margarine.

Put the rice, milk, and margarine into a saucepan. Bring just to boiling point then remove from the heat. Stir in the dates and orange zest. Pour into the prepared oven-proof pie dish and place the dish on a baking sheet.

Bake in the oven for about 2 hours or until the rice is tender and most of the milk has been absorbed.

Preparation 20 minutes and cooking time 2 hours

 

Variations:

Use other dried fruits, such as raisins or sultanas in place of some or all the dates. For added flavor, grate a little nutmeg over the top.
