Pudding rice                                    50 g

Milk                                                  600 ml

Margarine or butter                      15 g

Pressed date, chopped                  50 g

Orange grated zest                         1

Melted margarine                           for greasing

Heat the oven to 150 C. Brush the oven proof pie dish with melted margarine.

 

Put the rice, milk and margarine into a saucepan. Bring just to boiling point then remove from the heat. Stir in the dates and orange zest. Pour into the prepared oven-proof pie dish and place the dish on a baking sheet.

 

Bake in the oven for about 2 hours or until the rice is tender and most of the milk has been absorbed.

Variations:

Use other dried fruits, such as raisins or sultanas in place of some or all the dates. For added flavor, grate a little nutmeg over the top.
