Preheat your oven to 350˚F and lightly coat six soufflé dishes of 8 ounces using a nonstick cooking spray. Place these dishes on a baking sheet and set in your refrigerator to chill.

In a saucepan stir in the flour, sugar, and salt together, next whisk in lemon juice and milk. Cook the mixture stirring on medium heat for at least 8 to 10 minutes or until the mixture gets bubbly or thick. Stir in the lemon peel and remove from the heat.

In another bowl mix egg yolks with an electric mixer on a high to medium speed for 5 minutes or until they become thick and lemon colored. Mix in the milk mixture and stir the yolks in.

Next, beat the egg whites with the electric mixer in a separate bowl until foamy and add in the cream of tartar. Beat on high speed until stiff peaks are formed with the tip standing straight.

Gently fold in the egg whites into the milk mixture. Divide the batter evenly and prepare the dishes. Bake for 20 minutes or until the knife inserted is come out neat from the easy lemon soufflés. Serve immediately.
