Eggless Christmas Cake Recipe is rich, moist, brandy or rum soaked dry fruits loaded cake without eggs. It is an easy eggless vegan cake recipe on the specious occasion of Christmas.


Makes 1 (7 in or 18 cm square cake)



Eggless Christmas Cake Recipe

Wholemeal self-raising flour, 225 g

Sunflower oil, ¼ cup

Skimmed milk, ½ cup

Raisins, 2/3 cup

Sultanas, 2/3 cup

Currants, ½ cup

Apple juice, 1 cup

Glace cherries, halved, 1/3 cup

Hazelnuts, toasted, ¼ cup

Cut mixed peel, ¼ cup

Pumpkin seeds, 2 tbsp

Lemon rind, finely grated, 1

Chopped ginger stems, 2

Mixed spices, 2 tbsp

Brandy or dark rum, 3 tbsp

Glace fruits, for decoration


Preparation Method:

Eggless Christmas Cake Recipe

Place the raisins, sultanas, currants, cherries and peel in a bowl and stir in the apple juice. Cover and leave to soak overnight.

Preheat the oven to 150 C. Grease and line a 7-inch square cake tin.

Add the hazelnuts, ginger, pumpkin seeds and lemon rind to the soaked fruit. Stir in the milk and oil. Sift the flour and spice and stir into the mixture with the brandy or rum.

Soon into the prepared cake tin and bake for about 1 ½ hour or the cake is golden brown and firm to the touch.

Turn out and cool on a wire rack. Bruch with sieved apricot jam and decorate with glace fruits.
