Ingredients:
300 grams of chicken,
One pepper,
Half carrot,
Half onion,
2 teaspoons of bean paste,
5 teaspoons of water,
4 teaspoons of vinegar,
1 egg
3 teaspoons of sugar,
2 teaspoon of soy sauce,
1 teaspoon of cornflour,
One small onion,
1 garlic clove,
A small piece of ginger,
2-3 red pepper

Preparation Method:
Wash the pepper and remove the pepper thin white layer. Cut into long strips. Wash and peel the carrots and cut into thin strips. Cut the onion in half and cut it into the same manner.
Clean and wash the chicken and cut it into thin strips and keep aside. Take a bowl, add a little salt, white pepper, add an egg and beat them perfectly, and add an appropriate amount of corn starch.
Take the chicken strips and marinate. Keep it on aside.
Prepare the Fish Sauce
Next, prepare the fish sauce. Add 5 teaspoons of water, 4 teaspoons of vinegar, 3 teaspoons of sugar, 2 teaspoons of soy sauce, and 1 teaspoon of cornflour to the bowl. Combine them well with a spoon and set aside. The ratio of fish sauce is relatively easy to grasp. Cook the fish sauce until it is sticky.

Heat the pan first, and then add an appropriate amount of cooking oil. The oil temperature is about 40% hot. Put the shredded chicken into the pot. Use chopsticks to spread the shredded chicken to prevent sticking. Slide the chicken until it is lightly brown and cooked. Then take out from the frying pan. Please take care of the flame, if the oil temperature is too high the shredded chicken can easily stick together. The time of frying should not be too long, only about 20-30 seconds.
After the chicken meat is silky and cooked, take out the extra oil, leave a little oil in the pan base. Now, add the onion, minced garlic, and ginger slices to stir-fry. Then add two teaspoons of bean paste and a little pickled pepper and continue to stir fry. (Optional- you can use watercress sauce and stir-fry)
Cook the soup until it is sticky and then put it on the pan.
Now add the stir-fried shredded chicken and stir. Include the ready fish sauce which you made earlier (you can use readymade fish sauce also instead of making it at home-optional}
Fry in the fish sauce and continue to fry until all the liquid vapored.

Tips:
The shredded chicken is marinated and sizing in advance and the oil will be normally heated before frying.
The proportion of fish sauce must be well controlled, 5 teaspoons of water, 4 teaspoons of vinegar, 3 teaspoons of sugar, 2 teaspoons of soy sauce, and 1 teaspoon of starch.
