French Onion Soup with Cheese Souffle Recipe
For the soup
- 3 tablespoon of olive oil
- 20 gram of butter
- ½ teaspoon of castor sugar
- ½ kilogram of onion (sliced)
- 5 cups of vegetable stock
- 4 to 6 rounds buttered toast
For soufflé:
- 20 gram of butter
- 1 ½ tablespoon of flour
- 2/3 cups of warm milk
- ½ teaspoon of French mustard
- Salt to taste
- Pepper to taste
- 4 tablespoon of grated cheese
- 2 egg yolks
- 1 teaspoon of bread crumbs
- 3 egg whites.

Preparation Method:
French Onion Soup with Cheese Souffle Recipe
For Soup:
Inside the deep vessel, heat the butter and add castor sugar and olive oil.
Put in onions and cook using slow heat until the onion is transformed into a golden brown.
Pour in stock and heat till boiling.
Cover up the mixture and then simmer for up to an hour. The soup will reduce to 4 cups. Put it aside.
For soufflé:
Inside saucepan heat the butter.
Put in flour and stir on low heat till it forms a paste.
Add the milk, stir and allow it to boil on the heat in order to make the sauce that is thick and smooth.
Mix together salt and pepper.
Put off the heat and put in cheese
Allow sauce to cool and stir in the egg yolks slowly using a wooden spoon.
Inside another bowl, whisk in the egg whites together with a pinch of salt till stiff without getting dry.
Using a light hand, fold the mixture in the cheese sauce.
Pour in soup into baking dish and put add toasts over it, Pour in the soufflé on top of the soufflé on top of the toast. Sprinkle bread crumbs, butter, and cheese on top.
