If you buy from the supermarket, choose the juiciest looking ones and addition of some amount of sugar and vinegar are necessary, depending on their natural sweetness. Ingredients:
Fresh Tomato Soup Recipe
1.5kg riped tomatoes
1 ½ cups vegetable or chicken stock /broth
3 tbsp sun-dried tomato paste
3 tbsp caster sugar
Salt and black pepper
3 tbsp balsamic vinegar
Basel leaves to add
Basil sprigs, to garnish
Toasted cheese croutes and crème fraiche, to serve

Plunge the tomatoes into boiling water about half a minute, then refresh it in cold water. Peel away tomatoes skins and quarter them. Place them in a larger saucepan and shift over the vegetable or chicken stock. Place it on medium heat and bring to the just boil, lessen the heat, cover and simmer the mixture gently for 10 minutes or until all tomatoes are pulpy.
Stir in the tomato paste, sugar, vinegar and black pepper andcook gently, keep stirring for 2 minutes. Process the tomato soup in a food processor or a blender to make it smooth and bring back to the pan and reheat gently. Serve in bowls topped with one or two toasted cheese crouts and a spoonful of crème fraiche, garnish with basil leaves.
