6 firm-fleshed potatoes

Cooking Oil

Black Pepper


Pinch of curry powder

Pinch of turmeric powder

Preparation Method

Peel and wash the potatoes, cut them into 1.5 cm thick slices, then cubed. Do not wash them anymore.

In a frying pan, heat 3 tablespoons of oil. When the oil is hot, put the potatoes at once, and then coat them with oil in all directions with a wooden spoon.

Add salt and pepper (and possibly curry), then re-mix.
Bring to high heat and cook with the lid until a good smell of grilled potatoes comes out … Do not open them before! It takes between 3 and 5 minutes.

Now turn the potatoes. Lower the temperature by 2 degrees (for medium heat).

Put the lid back on, and then keep turning the potatoes every 3 minutes for 10 minutes.

Now Fried Potatoes are cooked. Check with the tip of a knife anyway.

Serve them as an accompaniment with roast or as a starter. I add the grain of salt.

Fried Potatoes Recipe is a basic dish; the way of cooking was given to me by a great native of Alsace cook. Accompanied simply by cold meat or eggs and a green salad, it’s a delight! When I find it, the red-skinned potatoes are very good, firm and tasty.
