Gajar ka Achaar is a complementary dish usually serves with meals, especially with boil rice, gram, pulses and vegetables. You can make this carrot pickle once in a season and store for months.

- Mustard Oil – ½ Cup
- Salt – One Tablespoon
- Mustard Seeds – Three Tablespoon in powdered form
- Carrots – 250 grams
- Red chilli- To taste

Peel all carrots and make small finger size slices. Do not make too thin pieces.
Take mustard oil, carrots, red chilli, mustard seeds and salt and mix them well.
Take a clean and air tight jar to pour all the ingredients.
Place this jar in sun for 8 to 10 days.
Shake the jar daily for better taste.
Gajar Ka Achaar or Carrot Pickle is ready, keep in a jar and use it for months.
