A simple Garlic Aubergine recipe makes a great meal for the family or friends. It is easy to make recipe. Eggplant recipe is full of minerals and vitamins. This will be a good accompaniment to chicken legs or leg of lamb.

600 aubergine

4 garlic cloves

5 tbsp olive oil

500 canned tomatoes, chopped

Salt and pepper

2 tsp thyme, fresh or dried

Wash the aubergines and remove the stalk ends. First quarter lengthways then cut into slices about ½ inch thick. Heat the olive oil in a large frying pan and fry until golden. Remove from the pan.

Crush the garlic and stir in the oil remaining in the pan and fry until it becomes golden.

Add the tomatoes and cook over a high flame until reduced by the third.

Return the Aubergines/Eggplants to the frying pan. Add salt, pepper, and thyme and cook for futher10 minutes.

For a complete meal add 500g minced steak and serve with boiled potatoes.

It is one of the best accompaniments to chicken legs or leg of lamb.
