Most of the people make mango or chilli pickle at home. Adrak ka achaar is not very common, but it is very easy and healthy pickle recipe. It is one of the popular Achar dishes that are being served during Navratras festival.

- Julienne size ginger – ½ kg
- Salt – 3 to 4 teaspoons
- Juice of 15 lemons
- Vinegar – 3 teaspoons

First of all, peel ginger and cut in julienne size.
Take a clean jar. Add lemon juice, vinegar, salt and ginger in it.
Put the achaar in air tight jar for an hour.
When the color of pickle changes (slightly pink), you can serve the Ginger Pickle or Adrak ka Achaar.
