Glamorgan sausage is a traditional Welsh vegetarian sausage for which the main ingredients are cheese, leeks, and breadcrumbs. It is close to the fritters fried until the outside becomes crisp and soft from inside. These veggie fritters are ideal for vegetarians.
It is a simple traditional Welsh recipe that makes a great veggie snack, these veggie sausages are ideal for breakfast or as a brunch dish.

Ingredients:

2 ½ cups fresh breadcrumbs
150g grated cheese
1 small leek, finely chopped
1 tbsp freshly chopped parsley
3 tbsp milk
1 ½ mustard powder
2 eggs
1 thyme sprig, chopped
Plain flour, for coating
1 tbsp oil
1 tbsp, melted butter
Salt and black pepper
Green salad leaves and tomatoes, to serve

Mix the bread crumbs, leeks, herbs, cheese, and seasoning. Whisk the eggs with the mustard and reserve 2 tbsp. Stir the rest into the cheeses mixture with enough milk to bind.
Divide the cheese mixture into 8 portions and shape them like sausage shapes.
Dip the cheese mixture in the reserved egg to coat. Season the flour, then roll the sausages in it to give a light coating. Chill for about 30 minutes until firm.
Preheat the grill and oil the grill rack. Mix the oil and melted butter together and use to brush over the sausages. Grill the sausages for 5-10 minutes, turning them carefully until golden brown all over.
Serve Glamorgan Sausages or Vegetarian Sausage hot or cold with green salad leaves and tomatoes.
