Mixed vegetable pickle is a spice of winter season. It is sweet and sour in taste. People, who do not eat vegetables on regular basis, can add Gobhi Shalgam Ka Achaar in their meal to make it more delicious.



Gobhi Shalgam Ka Achaar | Mixed Vegetable Pickle

  • Sliced Turnips – 500 grams
  • Powdered mustard seeds – 60 grams
  • Powdered garam masala – 60 grams
  • Chopped ginger – 60 grams
  • Peeled garlic – 60 grams
  • Small pieces of carrots- 750 grams
  • Cauliflower in florets form – 750 grams
  • Jaggery – 125 grams
  • Mustard oil – 250 grams
  • Vinegar – 180 grams
  • Salt – 60 grams
  • Chilli powder – 20 grams


Preparation Method:

Gobhi Shalgam Ka Achaar | Mixed Vegetable Pickle

Take a large size wok or kadhai and heat the oil.

In heated oil, add garlic and ginger till these get a light brown color.

Add carrot, cauliflower, and turnip and keep on stirring on high heat till the water evaporates from the vegetables.

In another saucepan, take jaggery and vinegar.

Let the vinegar to boil so that gur (jaggery) can dissolve in it.

When the vegetable liquid gets the oil color, add the vinegar solution, salt, and spices.

Turn off the heat when these ingredients come to a boil.

Gobhi Shalgam Ka Achaar or Mixed Vegetable Pickle is ready.
