Serve Golden Parmesan Chicken cold with the garlicky mayonnaise, these morsels of chicken make a great appetizer, especially if served informally as finger food.
Ingredients: Golden Parmesan Chicken Recipe
4 chicken breast fillets, skinned
1 ½ fresh white breadcrumbs
40g Parmesan cheese, finely grated
2 eggs, beaten
2 tbsp chopped fresh parsley
½ cup mayonnaise
½ fromage frais
2 garlic cloves, crushed
4 tbsp butter, melted
Salt and pepper

Cut each fillet into 4or 5 chunks. Mix together the breadcrumbs, Parmesan, parsley and seasoning in a shallow dish.
Dip the chicken pieces in the egg then into breadcrumbs mixture. Place it in a single layer on a baking sheet; chill for 30 minutes.
Meanwhile, to make the garlic mayonnaise, mix together the mayonnaise, formage faris, garlic, salt and black pepper. Spoon the mayonnaise into small serving bowl. Chill until required.
Preheat the oven to 180 C. Drizzle the melted butter over the chicken pieces and cook them for about 20 minutes until crisp and golden.
Serve the Golden Parmesan chicken immediately accompanied by the garlic mayonnaise for dipping.
