From grapefruits cut the peel into ¾-inch strips leaving only ¼-inch white pith attached. Place inside a small saucepan; punt in cold water to submerge. Allow to cook, drain and do it again two times.


Bring ½ cup of water, peel, 1 cup of sugar and allow it to cook inside the same saucepan; bring the heat down and allow it to boil till the peel turn translucent or heat for about 15 to 20 minutes. Remove water and put the peel into a wire rack and allow to dry for remain there for about 2 to 4 hours. Put in more of the sugar.
