Ingredients:

Green Lentil Soup Recipe

1 cup green lentils

5 tbsp olive oil

2 garlic cloves, thinly sliced

3 onions, finely chopped

2 tsp cumin seeds, crushed

¼ tsp turmeric powder

2 ½ cups chicken or vegetable stock

Salt and black pepper

2 tbsp fresh coriander, freshly chopped, to garnish

Put the lentils in a saucepan and cover with cold water. Bring to the boil and boil on medium heat for 10 minutes. Now drain.

Heat 2 tbsp of the oil in a pan and fry two of the onions with cumin, turmeric, and garlic for 3 minutes, keep stirring. Add the lentils, stock, and 2 ½ cups water. Bring to the boil, reduce the heat, cover and simmer gently for 30 minutes, until the lentils are soft.

Fry the third onion in the remaining oil until golden.

Use a potato masher to lightly mash the tendered lentils and make soup pulpy. Reheat gently and season with salt and pepper to taste.

Pour the Green Lentil Soup into bowls. Stir the freshly chopped coriander into the fried onion and spread over the soup. Serve with warm bread.
