2 red bell peppers, halved, cored and deseeded

2 yellow bell peppers, halved, cored and deseeded

4 tbsp olive oil

1 lemon rind, finely grated

4tbsp lemon juice

1 tbsp balsamic vinegar

1 tbsp rosemary

2 tbsp pine kernels (nuts)

Salt and black pepper

Rosemary sprigs, to garnish

Combine olive oil, lemon juice, lemon rind, vinegar, and rosemary. Add salt and black pepper to taste.

Place the bell peppers, skin-side uppermost on the rack of a grill or boiler pan, lined with foil. Brush the olive oil mixture over them.

Cook the bell peppers until the skin begins to char, basting frequently with the lemon juice mixture. Remove from the heat, cover with foil to trap the steam and leave for 5 minutes.

Meanwhile, scatter the pine nuts on the grill rack and toast them lightly.

Peel the bell peppers, slice them into strips and place them in a warmed serving dish. Sprinkle with the pine nuts and drizzle with the remaining lemon juice mixture over them.

Garnish Grilled Bell Peppers with sprigs of fresh rosemary and serve at once.
